You just can’t beat a good hearty home cooked meal and I’d like to share a favourite of mine with you, the Lobby.
Lobby or lobbies is a traditional beef and potato stew from my hometown, Leigh in Lancashire, UK.
We have a nickname in Leigh of being “lobby gobblers” as this dish was served up quite often and is well known as a Leigh dish.
Its cheap, filling and easy to make this is why it was so popular in our town.
My Mum would make her own handmade pastry crust to top it off. When the lobby was cooked she would place the crust on then place back in the oven again till the crust was golden brown. It’s a very warming and simply satisfying meal.
Recipe
4 large potatoes
1 tin of corned beef or you can use about 500gm shin beef
1-2 onions (optional)
Either gravy browning or 3 or 4 oxo cubes
Salt & Pepper to taste
Method
Chop potatoes into bite sized pieces, chop corned beef, chop onions. Place it in a big ovenproof dish and cover with gravy.
Use a low heat of about 140 – 150 degrees Celsius and let it cook for around 4/ 5 hrs.
I cover mine with tin foil or a lid and give it a stir up every hour or so.
Once it’s cooked you can serve with mashed carrots and turnip (swede in NZ) and beetroot or pickled red cabbage.
